There is a faster way to roast coffee — push the heat very high, cut the time, pull a batch in 8 minutes. Convenient for volume, but the beans are stopped before they fully "bloom" into their layers of aroma.

At MERUVA, each batch runs about 14 minutes. We follow the roast curve closely so the beans develop evenly from the inside out: the drying phase, the yellowing, then first crack — where the sweetness and fruit notes of Đà Lạt coffee truly reveal themselves.
